Step 1. Rinse and cut the tops off your Anaheim, Guajillo and Chipotle Chiles, and then coarsely chop them up.

Step 2. Place the chopped chiles in a large bowl. Heat 1 - 1/2 cups (12 oz.) of Water to boiling, then pour it over the chiles. Let your chiles soak in the water for about 10 - 15 minutes.

Step 3. Add in 1/4 cup of Vinegar (or Apple Cider Vinegar) into the bowl. You may add up to 1/3 cup if you prefer a more vinegar flavor in your hot sauce. Add 2 tbsp of the Secret Spice Blend, 1/2 tbsp to 1 tbsp of sugar (depending on desired sweetness), and 1/2 tsp of Salt into the bowl.

Step 4. Pour the mixture into a blender or food processor. Blend until smooth. Season to taste with salt and sugar.

Step 5. Pour the hot sauce into the sauce bottles (2 large ones and 2 small ones) and put the caps on.

Step 6. Last step toward professional hot sauce: Put the hot sauce labels on the glass bottles. ENJOY! :)

Step 7. Repeat the steps above for the next 8 bottles of hot sauce!
